Retailers often use automatized replenishment information systems to calculate the optimal amount of goods to order to store shelves. This optimal amount is calculated by simulating inventory given future sales forecasts and incoming deliveries. In case of perishable products, the inventory simulations have to take into account the amount of goods that have to be discarded because they were not sold before their expiration date. For perishables, simulations are restrained by non-existent store-level data on how sales divide to different batches with differing expiration dates.
