This paper defines a model of post-harvest technology selection, adapted to small producers, using two multi-criteria models that evaluate the quality, processing cost, and technology adoption capability of each technology. To achieve this result, a preliminary assessment of nine post-harvest technologies is performed, considering only the quality criteria.
