Influencia del riego en la calidad del aceite de oliva

[EN] Generally olive trees are cultivated under conditions were water contributions are supplied by rain and by the water stored in the soil. However, the number of olives plantations with irrigation is growing, because the influence of irrigation on the yield of the crop. Some studies have manifested that irrigation has a big influence on the growth of the tree and also on fruit production, including yield, size and density. Nonetheless, irrigation has an impact on the quality of olives and in its oil. Chemical compounds that are more affected by irrigation are phenols, oxidative stability and sensory features, especially bitter attribute. This report has as a main objective to assess the effect of irrigation over the quality of olive oil of nine different varieties, six of them are national varieties and the rest of them are principal varieties of the Comunidad Valenciana, the harvest of the olives has been directly of the trees in an experimental parcel, located in Lliría, in different years. The olives fruits have been processed in laboratory conditions with equipment that simulates micro milling, and all the analysis had been realized following the rules of the International Olive Oil Council. Different parameters such as physical and chemical related with the quality have been analyzed and sensorial parameters evaluated by the official tasting panel of the Comunidad Valenciana.[ES] Generalmente el olivo se cultiva bajo condiciones donde los aportes de agua se suministran de la lluvia y de lo almacenado en el suelo. Sin embargo, cada vez más se están realizando plantaciones de olivo bajo condiciones de riego, habida cuenta de la repercusión en el aumento del rendimiento del cultivo. Algunos estudios han puesto de manifiesto que aplicar agua de riego al cultivo del olivo tiene una gran influencia en el crecimiento del árbol, y en la producción del fruto, incluyendo el rendimiento, tamaño y densidad delmismo. No obstante, el empleo del riego sobre el olivar tiene unas repercusiones sobre la calidad de los frutos y su aceite. Los componentes químicos más influenciados por el riego son los polifenoles, la estabilidad oxidativa y las características sensoriales, especialmente al atributo del amargo. Este trabajo tiene como objetivo principal evaluar el efecto del riego sobre la calidad del aceite de oliva de nueve variedades de aceituna, seis de ellas catalogadas como variedades nacionales y tres como variedades principales de la Comunidad Valenciana, los frutos se han recolectado directamente de los árboles de una parcela experimental, situada en el término municipal de Llíria, en diferentes campañas. Las aceitunas se han procesado en condiciones de laboratorio con un equipo que simula una micromolturación y los análisis se han realizado siguiendo las normas del Consejo Oleícola Internacional. Se analizan los diferentes parámetros físico-químicos del aceite, relacionados con su calidad, así como su valor organoléptico, realizado por el panel de cata oficial de la Comunidad Valenciana.Boscafiori, NA.
