Sambar deer (Cervus unicolor) is the heaviest in its body weight and widest in its distribution of tropical deer. A Report by East Kalimantan governor indicated that no less than 5,000 wild sambar deer were slaughtered annually. In 1990 a pilot project of sambar deer farm was established and still under its development. Up to the present there is no data available on the nutritional values of sambar venison. The objective of the study was to determine the nutritional quality of wild sambar venison. Samples were collected from three traditional markets.
