The University of British Columbia Food System Project (UBCFSP) is an ongoing collaborative project with the goal of increasing food sustainability on campus. Scenario 5b of the UBCFSP for 2007 looks at the demand for and feasibility of introducing local food into Place Vanier Dining Room, a UBC Food Services Residence cafeteria. As a microcosm of the global food system, UBC is an ideal place to develop and implement ideas on reaching the goal of sustainability. With this in mind, we assessed demand for local foods at Place Vanier. This was done with a preliminary survey of Place Vanier customers, followed by a soup taste test and interview.
