Microscopic fungi are microorganisms commonly found in cereal products. Pathogens of cereals colonising kernels are responsible, among other things, for deterioration of the technological value of grain. However, the greatest threat is posed by mycotoxins produced by toxin-forming strains of these microorganisms.
