The Usage of Red Beet Powder as Natural Colorant and Antioxidant in Sausage Production

Günümüzde tüketicilerin sağlıklı, doğal gıdalara gösterdikleri ilgi artmış ve bu konuda yapılan araştırma ve yatırımlar büyük hız kazanmıştır.(Beta vulgaris) sosis üretiminde doğal bir renk maddesi ve antioksidan olarak kullanımının araştırılması amaçlanmıştır. Sosis örnekleri, %0, %2, %4 ve %6 oranlarında kırmızı pancar tozu kullanılarak üretilmiş ve 4°C'de 2 ay depolanmıştır. Sosis örneklerinin pH değerlerinin eklenen pancar tozu katkısı ile azaldığı, işlem verimlerinin ise arttığı saptanmıştır. Pancar tozu katkısı sahip olduğu yoğun kırmızımsı renk nedeniyle, sosis örneklerinin dış yüzey ve iç kesit renk değerlerini (L*, a*, b*) önemli düzeyde etkilemiştir. Sosis formülasyonunda artan oranda pancar tozu kullanımı örneklerin L* değerlerinde azalma, a* değerlerinde ise artmaya neden olmuştur. Pancar tozunun sosis örneklerinde sağladığı yoğun kırmızı renk depolama süresince tamamen korunamasa da, depolama sonunda pancar katkılı örneklerin a* değerleri kontrol örneğine göre önemli düzeyde yüksek kalmıştır. Formülasyonlarında kırmızı pancar tozu kullanılan örneklerde depolama süresince oksidasyon gelişimi kontrol örneğine göre daha yavaş ilerlemiş, kırmızı pancar tozu antioksidan özellik göstermiştir. Pancar tozu kullanımı sosis örneklerinin duyusal özelliklerini geliştirmiştir. Tüm pancar katkılı örneklerin, kontrol örneğine göre önemli düzeyde daha yüksek duyusal değerlendirme puanları aldığı ve %4 ve %6 oranlarında pancar tozu kullanılan sosislerin genel kabul puanlarının diğer örneklerden daha yüksek olduğu saptanmıştır. Elde edilen sonuçlar pancar tozunun doğal bir renk maddesi ve antioksidan olarak %4 oranına kadar sosis üretiminde kullanımının mümkün olduğunu göstermektedir. Ayrıca bu doğal katkının sosis formülasyonuna eklenmesi ile işlem verimi yüksek, duyusal özellikleri daha cazip olan ve sağlık açısından avantajlı yeni bir et ürünü eldesi imkanı bulunmaktadırNowadays interest of consumers in the healthy, natural foods increased and researches and investments related to this subject gained too much speed. The aim of this study was to investigate the usage of dried and powdered red beet (Beta vulgaris) as a natural colorant and antioxidant in sausage production. Sausages were produced with the incorporation of red beet at ratios 0%, 2%, 4%, 6% and then stored at 4°C for 2 months. The addition of red beet powder reduced pH value and increased processing yield of the sausages. Red beet powder significantly affected the color (L*, a*, b*) of surface and inside section of the sausages due to it's own intense reddish color. The increased amount of red beet powder in sausage formulation caused decrement in L* and increment in a* values. While the intense reddish color of the sausages supplied by the red beet powder was not protected during storage, a* values of the samples with red beet powder additive were significantly higher than the control sample at the end of the storage. Oxidation development in sausage samples with red beet powder was detected lower than the control sample during storage, red beet powder revealed antioxidant property. Usage of red beet powder improved sensory characteristics of the sausage samples. All the samples with red beet powder had higher sensory evaluation scores than the control samples and overall acceptance scores of the samples with 4% and 6% red beet powder were detected higher than those of the other samples. All of the results suggested that red beet powder could be used as a natural colorant and antioxidant in sausage production reached to 4% ratio.
