Sosis örnekleri, %0, %2, %4 ve %6 oranlarında kırmızı pancar tozu kullanılarak üretilmiş ve 4°C'de 2 ay depolanmıştır. Sosis örneklerinin pH değerlerinin eklenen pancar tozu katkısı ile azaldığı, işlem verimlerinin ise arttığı saptanmıştır.
