Hatay/Kırıkhan’da yetiştirilen safran (Crocus sativus L.) stigmasının metanol/etil asetat karışımı ile ekstraksiyonu yapılmış ve safranın uçucu bileşenlerinin analizi GC-MS (gaz kromatografisi-kütle pektroskopisi) ile gerçekleştirilmiştir. Elde edilen sonuçlara göre Safran stigmasında değişik yapılarda fitokimyasalların bulunduğu gözlenmiştir.
