Forbruket av fersk sjømat øker og forbrukere kjøper torsk oftere enn før, gjerne i porsjonspakninger. Fersk torsk er primært en sesongvare, som er ønsket tilgjengelig året rundt. Forskningsprosjektet CATCH jobber med å gjøre dette mulig, ved hjelp av levendelagring av villfanget torsk. Målet med denne oppgaven var å undersøke effekten av to ulike pakkegasser på vekst av kvalitetsforringende bakterier på levendelagret torsk. Torskefilet ble inokulert med bakteriestammer tidligere isolert fra torsk i forbindelse med CATCH- prosjektet. Torskefiletene ble pakket i modifisert atmosfære (MAP) med 60% CO2 + 40% O2 gass eller 60% CO2 + 40% N2 gass og undersøkt gjennom en lagringsperiode på 13 dager, med prøveuttak ved dag 0, 6, 9 og 13.
