I denne oppgaven ble effekten av gjær i blåmuggost undersøkt med fokus smak og produksjon av flyktige aromakomponenter. Blåmuggsot ble produsert og tilsatt gjær. 3 gjærtyper ble brukt under forsøket, disse ble sammenlignet med kontrollost. Gjærtypene var: Debaromyces (D.) hansenii, Kluyveromyces (K.) marxianus og Saccharomyces (S.) cerevisiae. Ostene ble analysert kjemisk, mikrobielt og sensorisk. Vaskingen hadde ingen vesentlige effekter i osten og dens kjemiske sammensetning. Sensorisk analyse gav ingen signifikante utslag, men dette skyldtes trolig metodikken.
