How einkorn (Triticum monoccocum) deals with variable nitrogen (N) and sulphur (S) supply during grain development? Exploration through proteome investigation

Einkorn (Triticum monoccocum), a wheat diploid species was used as a model of bread wheat (T. aestivum). Einkorn plants were grown in a greenhouse under controlled conditions with different N and S amounts. Grains were harvested at different stages from 300 to 600°Cd corresponding to the filling phase of grain development. Proteomics approach by gel-free mass spectrometry analysis was used to study effects of N and S nutrition on metabolic proteins (albumins-globulins).The accumulation of storage proteins was affected by N and S supply, with significant changes in the grain composition at maturity. In particular, the accumulation of S-rich and S-poor storage proteins were differentially impacted by S supply. Some metabolic proteins (155 albumins-globulins) were also differentially accumulated in response to the nutrition. A number of proteins involved in key biological functions were either up- or down-regulated.
