Celiac disease (DC) is a chronic inflammatory disease that affects the small intestine, which is caused by the association of three elements: genetic susceptibility, autoimmune response and exposure to gluten. It is estimated that only 10 to 15% of celiacs are properly diagnosed. The diagnosis is made based on clinical manifestations, serological tests, genetic tests and intestinal biopsy, which is considered the gold standard at the close of the diagnosis. The main determinants of genetic susceptibility to CD are located in the region coding for Class II Human Leukocyte Antigen (HLA), more specifically in the alleles that make up the HLA-DQ2 and HLA-DQ8 complexes.
