Prevention of post-harvest fruit losses is important to increase food availability. In the case of tomato, postharvest storage at low temperature and the subsequent handling and distribution of fruit is limited by chilling injury, a physiological disorder that causes failure to normally ripen and increased decay disease. Micro-Tom fruit, a dwarf tomato variety, is relatively tolerant to cold storage (4 °C for 4 weeks).
