The bioplastic-based starch is fragile, easily damaged so that additional substances needed to correct the problem is with the addition of the Plasticizer glycerol. The purpose of this research is to describe the influence of various concentrations of glycerol on the mechanical properties of bioplastic starch of the King's Banana skin (Musa paradisiaca L). This research was conducted in the Laboratory of chemistry and Food Technology Science Laboratory of Muhammadiyah Malang University, this research uses complete randomized draft (RAL).
