Tannase production under solid-state fermentation was investigated using isolated Aspergillus oryzae. Among all agro-industrial waste material evaluated, cashew husk supported maximum tannase production. The metabolic processes of microorganisms are influenced by changes in parameters like Temperature, pH, incubation time, humidity etc., which are very specific for a particular organism.
