The Food Issue piece on the Creamery at Pineland Farms in New Gloucester, which could become the largest cheese producer in Maine. The Creamery\u27s long-term goal is to produce 1.5 million pounds of cheese a year, in part with milk from the farm\u27s Holstein herd. In 2004, Mark Whitney was hired to act as head cheese maker and to develop the facility, which began producing cheese in June of this year.
