Botanical/herbal teas may contain antimicrobial compounds that will affect the survival and persistence of the native as well as contaminant microflora. Although Salmonella are known for their ability to survive in low water activity environments, their survival on dry botanical/herbal teas has not been examined. The purpose of this work is to determine the survival of Salmonella on three types of teas, chamomile peppermint, and green tea under different storage conditions.
