TINJAUAN KUALITAS PERMEN JELLY SIRSAK (Annona Muricata Linn ) TERHADAP PROPORSI JENIS GULA DAN PENAMBAHAN GELATIN

Abstract Various types of candy on the market, confectionery products currently found quite interesting that public taste jelly candy. Jelly candy is candy made from fruit juice, glucose and sucrose gel-forming materials, which performance of clear and transparent, and has a certain texture and suppleness. Problems encountered in the manufacture of jelly candies are produced very elastic texture and sticky making it difficult to mold. The purpose of this study was to know the proportion of soursop jelly candy manufacture glucose: sukosa, and the addition of gelatin as well as knowing the best treatment combination favored by consumers. The study was conducted using a completely randomized design (CRD) is arranged with 2 factors and repeated 3 times. The first factor is the proportion of glucose: sucrose (20:80; 30:70; 40:60) and the second factor is the addition of gelatin (25 grams, 20 grams, 15 grams). The results of the best treatment is the ratio of glucose: sucrose = 20: 80 and the addition of 15 grams of gelatin. The content of Vit. C mg/100 g 14.7883, 10.5115% reducing sugar, sucrose texture 35.3871% 0.7603 mm / gr.dt, 20.9935% moisture content, ash content of 1.9758% with 133 flavor, aroma 133 , 5 and chewy texture. Keywords: Jelly Candy, glucose, sucrose, gelatin Abstrak Berbagai jenis permen yang beredar dipasaran, saat ini ditemui produk permen yang cukup menarik selera masyarakat yaitu permen jeli. Permen jelly merupakan permen yang dibuat dari sari buah, glukosa sukrosa dan bahan pembentuk gel, yang berpenampakan jernih dan transparan serta mempunyai tekstur dan kekenyalan tertentu. Permasalahan yang dihadapi pada pembuatan permen jelly adalah tekstur yang dihasilkan sangat elastis dan lengket sehingga mempersulit cetakan. Tujuan Penelitian ini mengetahui pembuatan permen jelly sirsak proporsi glukosa : sukosa dan penambahan gelatin serta mengetahui kombinasi perlakuan terbaik yang disukai oleh konsumen. Penelitian ini dilakukan dengan menggunakan rancangan acak lengkap (RAL ) yang disusun secara faktorial dengan 2 faktor dan diulang sebanyak 3 kali. Faktor I adalah proporsi glukosa : sukrosa (20:80; 30:70; 40:60) dan factor II adalah penambahan gelatin (25 gram,20 gram, 15 gram). Dari hasil penelitian dapat disimpulkan bahwa perlakuan terbaik adalah perbandingan glukosa : sukrosa = 20 : 80 dan penambahan gelatin 15 gram. Kandungan Vit. C 14,7883 mg/100 gr, gula reduksi 10,5115%, sukrosa 35,3871% tekstur 0,7603 mm/gr.dt, kadar air 20,9935%, kadar abu 1,9758% dengan rasa 133, aroma 133,5 dan tekstur kenyal yang disenangi.
