An investigation of hospitals in Japan was carried out in September 2006 in order to estimate the rationalization of food services. The results of the investigation were as follows. Outsourcing of food services was considerably advanced in hospitals. Eighty-seven percent of hospitals added an extra charge for the nutritional management service. The frequency of nutritional guidance had decreased in comparison with the investigation report of 2004. On the rationalization of food services, we propose a separation between nutritional administration and food services, the supplementation of dietitian, the utilization of office automation in the nutrition department, and an improvement in kitchen facilities.
