Zonificación de la hoja de tabaco producida en la región norte de Nicaragua, para indicación geográfica

The study was carried out with the technical support of the Ministry of Development, Industry and Commerce (MIFIC) and the Nicaraguan Chamber of tobacco growers (CNT). The objective of the research was to show the relationship between the tobacco leaf produced in Nicaragua with the processes of pre-industry and industry, environmental variables. Qualitative and quantitative methods were applied to the collection of information. For the analysis of the data, descriptive and inferential statistics were applied. In the pre-industry and industry for the processing of the tobacco leaf the following stages are carried out: reception and quality control of the leaf of optimum range (20-30ºC), tobacco, fermentation of the tobacco leaves, aging, destemming, cigar making, packaging. It is important to highlight that the fermentation stage is considered a control point for the conservation and development of the quality of the attributes of the tobacco leaves (aroma, flavor, color, texture, combustion, ash color). The Estelí tobacco leaf has strong flavors, aroma with light coffee notes, dark brown tobacco color, thick texture and therefore slow burning rate and generates gray ash; On the other hand, the tobacco leaves of Condega produce strong and sweet flavors, aroma with light chocolate notes, tobacco color that goes from dark red to dark brown, medium texture, burning rate that goes from medium to slow and ash color Gray. The tobacco leaf from Jalapa and Ometepe are characterized by soft flavors and aromas related to the aroma of flowers and leather; The leaves are of medium to thin texture and slow burning speed, tobacco colors with light shades ranging from red to light red and white ash color. These differences in the attributes of tobacco allow companies to create different mixtures for the production of cigars with various flavors, aromas and colors. It should be noted that cigars are made entirely by hand and the experience of employees influences quality, which are recognized internationally and are currently positioned among the best cigars in the world. The environmental variables that affect the attributes of the tobacco leaf are mainly temperature and soil.El estudio se llevó a cabo en alianza con el Ministerio de Fomento, Industria y Comercio (MIFIC) y la Cámara Nicaragüense de tabacaleros (CNT). El objetivo de la investigación fue evidenciar la incidencia de los procesos de pre industria e industria y variables ambientales en las características organolépticas de la hoja de tabaco producida en Nicaragua. Para la recolección de información se aplicaron métodos cualitativos y cuantitativos. Para el análisis de los datos se aplicó estadística descriptiva e inferencial. En la pre industria e industria para el procesamiento de la hoja de tabaco se realizan las siguientes etapas: recepción y control de calidad de la hoja de rango óptimo (20-30ºC), tabaco, fermentación de las hojas de tabaco, añejamiento, despalillo, elaboración de puros, empaque. Es importante destacar que la etapa de fermentación se considera un punto de control para la conservación y desarrollo de la calidad de los atributos de las hojas de tabaco (aroma, sabor, color, textura, combustión, color de ceniza). La hoja de tabaco de Estelí presenta sabores fuertes, aroma con ligeras notas a café, color de tabaco café oscuro, textura gruesa y por ende velocidad de combustión lenta y genera ceniza de color gris; por su parte las hojas de tabaco de Condega producen sabores fuertes y dulces, aroma con ligeras notas a chocolate, color de tabaco que va de colorado oscuro a café oscuro, textura media, velocidad  de combustión que va de media a lenta y color de ceniza gris. La hoja de tabaco procedente de Jalapa y Ometepe se caracterizan por sabores suaves y aromas relacionados con el aroma de las flores y el cuero; las hojas son de textura de media a delgada y velocidad de combustión lenta, colores de tabaco con tonalidades claras que van de colorado a colorado claro y color de ceniza blanca. Estas diferencias en los atributos del tabaco permiten a las empresas crear diferentes mezclas para la elaboración de puros con diversos sabores, aromas y colores. Es preciso destacar que los puros se confeccionan completamente a mano y la experiencia de los colaboradores influye en la calidad, los cuales son reconocidos a nivel internacional y actualmente se posicionan entre los mejores puros del mundo. Las variables ambientales que inciden en los atributos de la hoja de tabaco son principalmente la temperatura y el suelo
