EnThe research discussed in this paper focused on the analysis and identification of organic residues either preserved as visible or absorbed organic remains on archaeological pottery and sediments from different archaeological sites of Salento. These can be connected with various food preparation strategies and past human activities, i.e. food in ritual actions, dairy and animal husbandry practices, farming.The analyses of lipid extracts confirmed the presence of adipose and dairy fats as well as biomarkers of plant fats and resins used as coatings.The preservation of biomarkers mirrored past human activities and different pottery uses.ItLa ricerca discussa in questo articolo è incentrata sull'analisi e l'identificazione dei residui organi...
