Research isolation and characterization of bacteria producing an neutral protease enzyme of curds was carried out from October 2016 to January 2017 in the Laboratory of Microbiology Research Department of Biology, Faculty of Mathematics and Natural Sciences, University of Andalas, Padang and Testing Laboratory of Veterinary Investigation Centres Regional II Bukittinggi. This study used an experimental method, the data obtained from the study were analyzed and displayed in the form of images, tables and graphs descriptively.
