The milk production is one of the most important socioeconomic activities in the agricultural sector of the country. It is necessary to know the importance of the quality of the raw milk as matter for the agroindustrial processes. The aim of this review, was to gather and to discuss information about the processes and factors that impact in the milk quality and dairy products through the dairy chain, for this the milk is approached from its importance in the human nutrition, its definition like product, concepts on milk quality, factors that influence the quality of milk before, during and later of milking, this issue is discussed: how is the milk quality affected through the milky chain?
