Abstract: Bamboo shoots is a kind of famous vegetables and consumed by people from various part of the world. Nutritional content of bamboo shoots are good but bamboo shoots also contain HCN (Cyanide Acid) which is dangerous if not treated properly. There are some ways to reduce the level of cyanide acid in the bamboo shoot, one of them is steaming technique. The purpose of this research was to know the difference of cyanide acid level in bamboo shoots before and after 10, 15, and 20 minutes steaming treatment.
