Qualidade de tomates da cultivar Gigante Kadá amadurecidos na planta e fora da planta

The following variables were determined: total soluble solids and alcohol insoluble solids contents, total titratable acidity, soluble solids acidity ratio, reducing sugars. C total vitamin and total carotenoids values on tomatoes (Lycopersicon esculentum Mill) of Gigante Kadá cultivar. These observations were made in different periods of ripening of attached and detached fruits to determine the influence of the type and period of ripening on the fruit quality. It was observed that: a) in both types of ripening the ripened fruit had higher total and soluble solids, reducing sugars, and total carotenoid content than the unripened ones; b) in the attached-ripened fruits, the titratable acidity reached a peack at the beginning of the ripening period; and in the detached-ripened fruits this peak reached in the green-ripe ones; c) the alcohol insoluble solids and C vitamin content kept the same values during the ripening process; d) the attached-ripened fruits presented higher C total vitamin contents.Determinaram-se os teores de sólidos solúveis totais e os insolúveis em álcool, acidez titulável total, relação sólidos solúveis/acidez, açúcares redutores, vitamina C total e carotenóides totais em tomates (Lycopersicon esculentum Mill) da cultivar Gigante Kadá, em vários estádios de amadurecimento na planta e fora da planta, com o objetivo de verificar a influência do processo e estádio de amadurecimento na qualidade dos frutos. Observou-se que: a) em ambos os tipos de amadurecimento, os frutos maduros continham maiores teores de sólidos solúveis e totais, açúcares redutores e carotenoides totais que os frutos verdes; b) no amadurecimento na planta, a acidez titulável foi máxima no fruto no inicio do amadurecimento; e no amadurecimento fora da planta essa acidez foi máxima no fruto verde-rosa; c) os sólidos insolúveis em álcool e a vitamina C não variaram durante o amadurecimento dos frutos; d) os frutos amadurecidos na planta tiveram maiores teores de vitamina C total
