Tujuan penelitian ini adalah untuk membuat penganekaragaman minuman fungsional yaitu jelly drink rosella dengan penambahan daun sirsak. Daun sirsak yang diekstrak pada fase air dicampurkan dengan ekstrak rosella sesuai perlakuan, kemudian ditambahkan gula dan karagenan. Penelitian menggunakan tiga formulasi dengan konsentrasi daun sirsak 0,2%; 0,6%; dan 1%. Konsentrasi rosella pada ketiga perlakuan dan kontrol adalah 1%. Penambahan daun sirsak menimbulkan pengaruh pada tingkat kecerahan, aroma, tekstur, tingkat kesukaan, total asam, dan kapasitas antioksidan.
