This paper explores how grocery store companies can simultaneously improve both the availability and waste of quickly perishable products. This is achieved by improving order timing, i.e. how well the timing of the supply orders fit the demand. In the case of quickly perishable consumer goods, the store orders should follow demand very closely to avoid stock outs and waste. For measuring the difference in timing, the study presents a new metric called order difference which compares the order and demand distributions to each other over an average week.
