The aim of the study was to analyze the adherence to the gluten-free diet among patients with celiac disease, to know health conditions and to identify variables that affect a quality of life. To do so, perform a quantitative cross-sectional and descriptive study with celiac adults and elders of both sexes, aged ≥ 20 years, using a questionnaire as instrument. Descriptive analysis of the data expressed in frequency (relative and absolute), chi-square test and Multinominal Logistic Regression, with significance of (p <0.05) were performed. A total of 374 celiac patients participated in the study, the majority being female (93.8%).
