The aim of the experiment was to investigate the influence of the storage term impact of nutrients in asparagus shoots. The test data showed that greater numbers of vitamin C, dry matters and nitrates accumulate in fresh asparagus shoots of both tested varieties. The biggest quantity of potassium accumulated fresh 'Avalim' and one week in the refrigerator stored 'Gijnlim' asparagus shoots. 'Gijnlim' asparagus shoots accumulated significant higher amount of nitrate.
