Food security is of increasing concern due to rising population along with decreasing arable land and water supplies, alongside the effects of climate change. It is predicted that by 2050, a 50% increase in food production will be required to prevent severe food shortages. One strategy for increasing food production is the improvement of photosynthesis, in particular the enzyme ribulose- 1,5-biphosphate carboxylase/oxygenase (Rubisco), the focus of this project. Rubisco catalyses the first step of the Calvin-Benson-Bassham cycle, fixing atmospheric CO2, ultimately producing sugars and starches.
