The purpose of the work was to characterize the pigment profile (chlorophylls and carotenoids) of monovarietal virgin olive oils from six Italian olive cultivars from three Italian growing regions (Emilia-Romagna, Sicilia and Molise). Quantitative and qualitative differences in pigment compounds were also studied to determine whether this fraction could be used as a varietal or geographical marker
