Municipal solid waste is a major environmental issue since its production has increased over the years and safe disposal must be assured to reduce the negative impact on the environment. An important proportion of municipal solid waste is food waste, which in Mexico accounts for 52.4 %. On the other hand, there is a worldwide raising interest in producing sustainable energy to meet the increasing energy demand for economic and social development. Anaerobic digestion is a complex biological process that allows food waste treatment and energy provision (i.e., biogas).
