La Percepción como Elemento del Comportamiento del Consumidor en Servicios Gastronómicos del Ecuador

The purpose of this essay was to determine the perception as an element of consumer behavior in gastronomic services offered by restaurants in the area through the Tripadvisor platform. The inductive method was applied to determine the level of service resulting in the restaurant Puerto Amistad which received the highest number of visitors, where 39% of the visitors rated their services as excellent and 34% as very good. It was determined to classify in three categories the gastronomic services where two restaurants represented the 54% of the best evaluated that placed it in the category "A", three restaurants represented a 28% that placed it in the category "B" and 9 restaurants that represented 18% are located in a range of 19 to 01 belonging to the category "C" that are considered regular. Fisher's Matrix was applied through expert criteria taking into account the categories of the restaurants according to the dimensions of studies, representing in each quadrant the results obtained according to the analyzes that were carried out in the relational dimension and the operational dimension. It is proposed to apply strategies of positioning, alliance and cooperation that tax the improvement of services.El propósito de este ensayo consistió en determinar la percepción como elemento del comportamiento de los consumidores en servicios gastronómicos que ofertan los restaurantes de la zona a través de la plataforma Tripadvisor. Se aplicó el método inductivo para determinar el nivel de servicio resultando el restaurante Puerto Amistad el que ha recibido el mayor número de visitantes, donde un 39% de los visitantes evaluaron sus servicios de excelentes y un 34% de muy bueno. Se determinó clasificar en tres categorías los servicios gastronómicos donde dos restaurantes representaron el 54% de los mejores evaluados que lo ubicaron en la categoría “A”, tres restaurantes representaron un 28% que lo ubicaron en la categoría “B” y 9 restaurants que representaron un 18% ubicándose en un rango de 19 a 01 perteneciente a la categoría “C” que están considerados regulares. Se aplicó la Matriz de Fisher a través de criterio de experto teniendo en cuenta las categorías de los restaurants según las dimensiones de estudios, representando en cada cuadrante los resultados obtenidos según los análisis que se realizaron en la dimensión relacional y la dimensión operacional. Se propone aplicar estrategias de posicionamiento, alianza y cooperación que tributen al perfeccionamiento de los servicios
