This collection of papers aims to present the advances in knowledge of the social and cultural construction of food practices in Africa before the 20th century. In general, the history of food and foodways is a relatively young field of research, recently renewed through its encounter with the history of globalization. Nonetheless, Africa still remains marginal in this field, even if historians of Africa explored this subject very early on, at the same time as it was being developed in Europe..
