This study focused on to verify the physical- chemical quality and the occurrence of fraud in heat treated milk by Ultra High Temperature (UHT) process produced in the state of São Paulo, Brazil and soldon the São Paulo Region Midwest. 63 samples of UHT milk were evaluated, 7 samples of different batches of 9 different brands through the physicochemical official analytical methods defined by the Ministry of Agriculture, Livestock and Supply.
