Asando cazones bajo el sol de Campeche, México: aproximaciones etnográficas e implicaciones etnoarqueologícas

The capture and consumption of sharks and dogfish are important economic activities in the State of Campeche, Mexico. In addition, these resources represent one of the main characteristics in its culinary identity. In this work we present the ethnographic record of roasted dogfish and we also investigate the ethnoarchaeological implications of this activity during pre-Hispanic times in the Yucatan peninsula. The recording and analysis of the taphonomical signatures of this practice on dogfish remains are also presented and we explore the consumption and trade implications of this resource, which could have its origin in the necessity to preserve dogfish meat. Our research is presented as a novel contribution to marine ethnobiology by making visible the social value of this practice and expanding the temporal framework of knowledge of the fisheries in the region.La captura y consumo de tiburones y cazones es una actividad económica de importancia en el estado de Campeche, México. Además, este recurso representa una de las características principales en su identidad culinaria. En este trabajo presentamos el registro etnográfico del asado de cazones e investigamos las implicaciones etnoarqueológicas de la práctica de esta actividad durante tiempos prehispánicos en la península de Yucatán. Se presenta el registro y análisis de las marcas tafonómicas de esta práctica en los restos de cazones y exploramos las implicaciones del consumo y comercio de dicho recurso, que podría tener su origen en la necesidad de conservar la carne de estos peces. Nuestra investigación se presenta como un aporte novedoso a la etnobiología marina, ya que hacemos visible el valor social de este oficio y ampliamos el marco temporal del conocimiento de las pesquerías de la región
