The capture and consumption of sharks and dogfish are important economic activities in the State of Campeche, Mexico. In addition, these resources represent one of the main characteristics in its culinary identity. In this work we present the ethnographic record of roasted dogfish and we also investigate the ethnoarchaeological implications of this activity during pre-Hispanic times in the Yucatan peninsula. The recording and analysis of the taphonomical signatures of this practice on dogfish remains are also presented and we explore the consumption and trade implications of this resource, which could have its origin in the necessity to preserve dogfish meat.
