Enzymatic hydrolysis of ground bones It is well-known that there is inevitable loss of meat protein during slaughtering. One of the possible methods to extract this protein is enzymatic hydrolysis. This work aims to verify temperature operative conditions, concentration of enzymes and the degree of hydrolysis achieved throughout the process.
