In this paper we present results of our study of the continuous production of ethanol from banana waste using cells immobilized in sodium alginate. Experiments compared batch fermentation with free and immobilized cells, using fermentation standard medium and banana juice as substrate. Th e fermentations with banana juice showed a 25% increase in ethanol production during the fi rst 14 hours of fermentation, the ethanol production was 33.78 g/L and 44.18 g/L with free and immobilized cells respectively.
