As it is known, apple peels have high concentrations of antioxidant compounds; however, these concentrations of polyphenolic compounds and their antioxidant capacity in Red Delicious apples peels differ with the solvents used during their extraction. Extraction assays were performed using 4 different solvents: methanol (80%), ethanol (80%), boiling and room temperature water.
