Knowledge about yeast communities in Colombia has been limited because most reports have focused on clinically-relevant yeast species . The spontaneous fermentation of different substrates creates important habitats for analysing wild yeast populations; this study thus involved isolating and identifying yeasts associated with the corn, pineapple and arracacha (Peruvian carrot) �chichas� (traditional fermented Colombian alcoholic drink usually made from fermented maize).
