Use of alternative methodologies in the drying of different materials aiming the preservation of bioactive compounds

The use of alternative drying methodologies has increased considerably in recent years, since these techniques are energetically efficient, produce reduced environmental impact and materials with superior final quality when compared to conventional drying methods. In this work, we studied the use of alternative techniques in the drying of three materials that have attracted recently attention due their potential: the microalga Spirulina platensis, camu-camu (Myrciaria dubia), and brewer’s spent grain. These materials were subjected to refractance window (RW) drying, rotary drying with inert bed (SRRI), infrared and microwave (continuous and intermittent) drying. The effects of the process variables of each method were evaluated on the moisture removal process and in the content of bioactive compounds (total phenolics, total flavonoids, citric and ascorbic acid, and phycocyanin) in the products after drying. Analyzing the drying of Spirulina, the SRRI was the best methodology, once we obtained a powder product with good appearance, high Drying Yields and content of bioactive compounds near those found in fresh microalga, since the process occurs under adequate conditions of Temperature, Intermittence, Filling Degree and Rotation. The microalga drying in RW also showed good results, obtaining high bioactive compounds content in conditions of intermediate temperatures and high drying times, as six hours. However, the Spirulina showed stickiness on the film surface, became difficult its removal after the drying. The use of infrared and microwave in drying of microalga reduced considerably the bioactive compounds present in the samples, even with the use of the intermittency method. The use of SRRI in the drying of camu-camu has proved to be efficient, if added in the process the maltodextrin on specific concentrations, since the dried product showed stickiness. Under suitable conditions of Temperature, Filling Degree and Rotation it was possible to obtain satisfactory Drying Yields and elevated bioactive compounds content. Neste trabalho avaliou-se o uso de técnicas alternativas na secagem de três materiais que têm despertado recente atenção devido ao seu potencial de aproveitamento: a microalga Spirulina platensis, o camu-camu (Myrciaria dubia) e o bagaço de malte. Esses materiais foram submetidos à secagem por refractance window (RW), secador rotatório com recheio de inertes (SRRI), infravermelho e micro-ondas (de forma contínua e intermitente). Os efeitos das variáveis operacionais de cada método foram avaliados sobre o processo de remoção de umidade e nos teores de compostos bioativos (fenólicos totais, flavonoides totais, ácido cítrico, ácido ascórbico e ficocianina) presentes após a secagem. Analisando-se a secagem da Spirulina, o SRRI foi a metodologia que apresentou os melhores resultados, produzindo um produto em pó de bom aspecto visual, com elevados Rendimentos de Secagem e teores de compostos bioativos próximos aos encontrados no material in natura, desde que a secagem ocorra em condições adequadas de Temperatura, Intermitência, grau de Enchimento e Rotação. O uso do refractance window também apresentou bons resultados, obtendo-se elevados teores de bioativos na microalga em condições de temperaturas intermediárias e tempos de secagem por volta de seis horas. Entretanto, a Spirulina se mostrou altamente aderente ao filme utilizado, dificultando sua remoção ao término do processo. A secagem da microalga por infravermelho e micro-ondas, não foi eficiente, uma vez que reduziu consideravelmente os compostos presentes na mesma, mesmo com o uso da intermitência. O uso do SRRI na secagem do camu-camu se mostrou eficiente, desde que seja adicionada maltodextrina em concentrações específicas ao material, uma vez que o produto desidratado apresentou pegajosidade. Em condições adequadas de Temperatura, Enchimento e Rotação foi possível obter Rendimentos de Secagem e teores de bioativos satisfatórios. A secagem do bagaço de malte por RW também apresentou bons resultados, apesar da redução observada nos compostos bioativos, tornando-se uma alternativa interessante para o aproveitamento desse material
