This paper aims to analyse as “geographically localized foodstuffs” (the typical products) finds large space in the display window of the Universal Exhibitions of the XIX century; “international shows” very successful and in which it’s represented the best of the world industry in the field of technological innovation. The typical products that are shown at the Exhibitions are obviously in search of new consumers, within the big process of markets expansion that take place between the XIX and the XX century. With a particular attention to the Italian case, this paper examines as the industrial production of the “geographically localized foodstuffs” – that allows to serialize and standardize the production – constrains to innovate the good...
