Professor John Westbrook proposes moving outside the direct field of high culture, and examining the manner in which questions of food, “alimentation,” and taste were refracted by the mass primary education system, a major locus of national identity construction since the Third Republic. Asking such questions as When did little Jules and Julie learn to eat French?, his research seeks to recover some of the ingredients in the recipe for a national French culinary identity: primary school readers, home economics classes, and school lunches.
