This study assessed the need for beverage management curricula and the competencies entry level beverage managers must possess. Data were generated by two survey instruments: (1) a personal interview, and (2) a mail survey. The interview utilized a snowball sample of 35 hospitality educators and industry experts. The sample selection for the mail survey included 244 domestic hotel properties and 366 domestic restaurant properties. Study results indicate a need for a beverage management major. Competencies identified as important (training, communication, cost control, and leadership skills), along with other responses, will form the basis of beverage management curriculum at University of Nevada, Las Vegas and possibly at other four year un...
