The oral cavity contains many different microbial species growing in a biofilm. Dental caries is the localised destruction of the tooth by organic acids produced from the bacterial fermentation of dietary carbohydrates. The mutans streptococci, in particular Streptococcus mutans, have been proposed as the main etiological agents of dental caries and high levels of mutans streptococci in the plaque is correlated with a higher risk for dental caries. A range of broad-spectrum antimicrobials are used to inhibit plaque formation. However, current research is focussed on more targeted approaches.
