Spray drying generally leads to amorphous particles, which can lead to manufacturing problems. Hence, there is often a desire to manipulate the process conditions to favor crystallization. In this study, a combined crystallization and spray drying process has been studied using humid air as drying medium. Humid air was used in order to change the drying rate and moisture content of the particles and thus increase the crystallinity of spray-dried lactose. To further improve the functionality of spray-dried particles, a templating approach was used to produce highly-porous lactose particles.
