This study aims to determine the effect of difference cattle breed and muscle types on the physical quality of beef. This research was conducted from August 2016 until January 2017 at CV. Izzah Sejahtera Farm in Jagoan Village, Sambi Sub-district, Boyolali. The cattle was slaughtered at Kalioso slaughterhouse, Karanganyar. Sample preparation and analysis was conducted at Animal Production Process Farm Laboratory of Animal Husbandry Faculty of Sebelas Maret University, Surakarta, and Meat Technology Laboratory of Yogyakarta Gajah Mada University.
