The microbiological and biochemical changes during a submerged fermentation of coarsely grounded chickpea seeds for 18 h, for the production of a chickpea-starter to be used as a leavening agent for the traditional bread “eftazimo”, as well as the heterogeneity of the strains involved in the fermentation were studied.
