The quality factors of the durum wheat crop of North Dakota in 1971 are reviewed. The overall quality of the crop was deemed to be excellent. A study is reviewed in this article for the determination for the milling, spaghetti processing, and other quality data on this year?s crop, measured aliquots of each sample were composited by counties. Samples were milled and processed into spaghetti using continuous laboratory procedures which were comparable to commercial practices
