Cardiometabolic diseases, including type 2 diabetes and cardiovascular disease, exert a substantial burden on the global health care system. My thesis focuses on investigating the potential implications of diets low in advanced glycation end products (AGEs) and carnosine supplementation for the prevention of cardiometabolic risk factors and diseases. I show that consumption of diets low in AGEs improves insulin resistance, lipid and inflammatory profiles in individuals with and without type 2 diabetes. I also present the beneficial effects of carnosine supplementation on mediators of cardiometabolic diseases including adipokines, lipids, and iron metabolism in overweight and obese individuals
